Katie Peterson, Owner & Chef at Nourish

As long as Katie can remember, she has loved food. As her love for the culinary world grew, it developed onto a profession at the Le Cordon Blue College of Culinary Arts in Chicago and onto a decade and a half in the hospitality industry.

Shortly after her move to Seattle, things began to shift for Katie. Inspired by the Pacific Northwest, she began to contemplate the mind body connection to overall health and well-being. This led her to embark on a 200 hour registered yoga teacher training and into the field of nutritional study. As she began to learn more about food and how it affects us, she started to not just make great tasting food, but great tasting food with nutritional purpose. From this, Katie created Nourish. A company whose heartbeat is the combination of intuition and compassionate that help guide others on the path to leading healthy, balanced lives.

In 2010, Shannon set out for Kenya on her first Africa adventure. The moment she stepped off the plane she was in love. In 2014 she made the choice to leave her 11 year culinary career where she worked as an executive chef in fine dining to work alongside her spouse at African Safari Co.

She has since explored the plains of the Serengeti in Tanzania, adventured through the mazes of the souks in Morocco, made several trips exploring South Africa from top to bottom and will head to the Okavango of Botswana in a few weeks.

Julia's summers as a child were spent exploring her grandparent's farm in Zimbabwe, game parks throughout the region and visiting family in South Africa. These experiences shaped her more than she could have imagined, and in her early 20s she packed her bags and headed to Zambia to manage a camp in the South Luangwa Valley. Julia returned and joined her father, Mike, at African Safari Company in 2001 assisting with special projects until she came on board as the Director of Sales in 2011.

Julia has traveled countless times to Africa: South Africa, Namibia, Botswana, Zimbabwe, Zambia, Kenya, Tanzania and Morocco vetting safari lodges, meeting guides and exploring game reserves and her favorite African cities (Cape Town being her top pick!). Julia put together the Yoga Safari using some of her favorite lodges and accommodations and will be coordinating the trip from African Safari Co.'s home base in Seattle.
